Pinocchio’s Ice Cream (pinocchioicecream.ca)
This is a local family run business established in 1981.  Salvatore Ursino decided to bring a quality Italian frozen dessert product to tantalize the local palate. The quest from Italy to Edmonton has proven itself a great success.  They focus on using natural quality sourced products to produce a product that has less sugar than most ice cream.  Most ice cream has a high over-run (air content), some even up to 150%. Pinocchio’s averages an over-run of 30%. Over time, the business has been passed down to son Tom. Today, times and tastes have changed. They are now experimenting with fruits combined with locally organic produced herbs such as basil, lemon verbena, and even rose petal. Pride in quality, and consistency is a permanent value you will find with their products. Such an example would be the Vanilla. Only the best vanilla extract is used, which happens to be Madagascar vanilla, They use twice the recommended amount….you can really taste the vanilla.
